Whenever September comes around, even though it’s still hot where I live, I still want all the cinnamon spice this and that! When I make curry at home, I grab ideas for ingredients from mixed resources… there’s Red Thai Curry, then of course Green curry, Indian curry (“Jalfrezi”) and of course there’s the traditional curry.  I have followed many recipes “to the tee,” with careful grocery store planning to obtain every ingredient. Lately however, my life is a mixed up mod podge of projects, and my curry dishes have become the same way. No particular recipe followed… just a mix of this and that from various recipes I’ve followed over the years. I finally wrote down this version quickly on a busy school night, with little time to get a meal on the table for my family.  My children and my husband all reached for seconds, and there were NO LEFTOVERS! My daughter recently earned a Summer Reading prize out our local library. The prize was a Wendy’s Frosty.  She looked at the coupon and said “Mom, what’s a Frosty?” Part of my heart sunk…. I realized she had never stepped foot in a Wendy’s! I banned Wendy’s while pregnant with her, as a Wendy’s meal (baked potato and side salad) was the only meal that ever made me throw up during my gestational period with her.  But plants have a way of providing us everything we need, without fake fillers, preservatives, refined this and thats, animal by-products, and we still get tasty sweet treats like… a Frosty. … just better…. my daughter asked me to put this recipe on my blog, so here it is! I love to pull out this recipe on special occasions and long relaxing weekends or Holidays! Blueberries just happen to be in season in my neck of the woods, so this is a perfect use for such a beautiful, colorful, flavorful and beneficial berry!  I also make these for my musician friends and they love them every time! When I started researching the benefits of sprouting grains, nuts, legumes and seeds I was able to successfully revisit these delicious blueberry muffins with alternative ingredients, and still have wonderful results! There are numerous benefits to sprouting plant foods, which I will get into in a different blog. One good run of thumb when it comes to choosing beneficial foods is: “if it doesn’t’ sprout, throw it out!” (more…)

We are not huge on coconut flakes in our home. But sometimes a little hint of coconut flavor in some dishes gives traditional recipes a fun twist. I like to use coconut products as butter,  oil, milk and sugar substitutes in raw food preparations, cooking, AND vegan baking! This classic chocolate chip cookie recipe uses a couple coconut-based substitutes to lessen the inflammatory response, as well as add a not-too-overwhelming coconutty-hint.  This recipe usually gets pulled out around Fourth of July and for Santa Clause during the holiday season. The dressing is the game changer when it comes to enjoying salad greens. But let’s be honest, some salad greens are really used as a means of eating a liquidy goodness that is too-often loaded with crazy ingredients that aren’t doing good things to your body… at all!! I started making my own salad dressings about 5 years ago. It saves money in the long run, especially if you are picky about the ingredients like I am… plus the extra perk of making the dressing exactly the way you like it!! (more…)
